摘要
目的研究福建海域鲜活海产品中铅、镉含量水平,评估居民的膳食暴露量。方法采集捕捞和养殖环节的未添加任何物质的鲜活海产品196份,用电感耦合等离子体质谱仪测定铅、镉含量。结合福建省居民膳食消费量数据,应用点评估法对居民海产品铅、镉的暴露量进行评估。结果 196份样品中铅、镉超标率分别为0和8.2%。居民膳食中海产品的铅最大摄入量为40.2!g/d,占每日允许最大摄入量(PTDI)的18.8%;海产品镉的最大摄入量为74.8!g/d,占PTDI的125%。结论福建省居民膳食中海产品铅的摄入量安全,镉的摄入存在安全风险。日常膳食要控制双壳类和甲壳类海产品的摄入量及食用频率。
Objective To study the contents of lead and cadmium in fresh sea foods from Fujian coast area and evaluate dietary exposure of the residents.Methods Totally 196 samples of fresh sea foods without adding any material during fishing and cultivation were collected from Fujian coast area.Contents of lead and cadmium in the samples were detected by inductively coupled plasma-mass spectrometry method(ICP-MS).Combined with resident's food consumption data,exposure level of lead and cadmium were evaluated by point assessment method.Results The exceeding standard rates of lead and cadmium were 0% and 8.2%.The maximum daily intakes of lead by sea foods was 40.2μg/d.It reached to 18.8% of PTDI.And the maximum daily intakes of cadmium was 74.8μg/d.It reached to 125% of PTDI.Conclusion The intakes of lead by sea foods are basically safe,while the intakes of cadmium are faced with risk in Fujian residents.So the dietary intake and frequency of sea foods consumption for bivalves and crustaceans should be strictly controlled in daily life.
