摘要
试验将茶树菇、瘦肉做成菇丁、瘦肉丁添加进黄豆原酱中,经炒香、调味后制成茶树菇瘦肉酱。通过单因素试验和正交试验确定瘦肉酱的最佳配方。结果显示:茶树菇瘦肉酱最佳配方为茶树菇20%、瘦肉15%、黄豆原酱30%、大豆油12%、白砂糖6%、辣椒粉4%、食盐2.5%、味精1.5%、黄酒2%、姜1%、蒜1%、食用香料2%、水适量。按此配方制得的茶树菇瘦肉酱油润红亮,酱香浓郁,鲜辣微甜,酱体浓稠适中,肉丁、菇丁有咀嚼感。
Add diced Agrocybe aegirit and lean meat into soybean paste to make Agrocybe aegirit and lean meat sauce.With single factor test and orthogonal test,the best formula is of Agrocybe aegirit and lean meat sauce is confirmed.The result shows that the best formula is Agrocybe aegirit of 20%, lean meat of 15%,soybean paste of 30%,soybean oil of 12%,sugar of 6%,chili powder of 4%,salt of 2.5%,MSG of 1.5%,yellow wine of 2%,ginger of 1%,garlic of 1%,flavouring substance of 2%,and some water.In this way,the Agrocybe aegirit and lean meat sauce has wonderful flavor and rich nutrition.
