摘要
采用定量灌胃的方式研究抗性淀粉的补充对过度煎炸油引起的大鼠肝损伤的保护作用。选取24只成年Wistar大鼠随机均分成3组,分别灌胃生理盐水(control)、过度煎炸油(DFEO)、另外一组同时灌胃过度煎炸油和抗性淀粉(DFEO+RS)。6周后腹部主动脉取血,用于各项生化指标的检测;取肝脏组织做组织切片H&E染色观察并计算肝脏指数。结果表明,与对照组相比,DFEO组血清中ALT、ALP水平显著升高(P<0.01),GSH-Px、T-AOC水平显著降低(P<0.05);肝组织切片显示出现脂肪空泡,肝窦扩张,肝细胞界限不清;肝指数显著下降(P<0.05);而DFEO+RS组各项指标与对照组相比均无显著差异。这说明过度煎炸油中的含有大量毒性物质,会对肝组织细胞造成严重的损伤,而抗性淀粉对其有明显的改善效果。
In order to understand the protective effects of resistant starch (RS) on deep frying edible oil (DFEO) induced liver injury in rats,24 Wistar rats were randomly divided into three groups, in which each was received with saline, DFEO,resistant starch(RS) and DFEO per day,respectively. Their blood were taken from the abdominal after 6 weeks and the liver tissues were used for liver tissue observation and the calculation of liver index. The results showed that: compared with the control group, while the ALT,ALP levels were higher in the DFEO group (P〈0.01), the serum levels of GSH-Px, T-AOC were significantly decreased (P〈0.05). Meanwhile, the tissue sections of liver showed that there was some fat vacuoles, liver sinusoidal expansion in the DFEO group, and liver cell boundaries were not clear. And the liver index was significantly decreased in the DFEO group (P〈0. 05). However, there was no significant difference between the DFEO+RS group and the control group. It indicated that the deep frying oil contained large amounts of toxic substances, causing serious damage to the liver cells,, but RS could improve the damage.
