摘要
水冷自然通风库节能节本、低碳环保.本文为研究水冷自然通风库对赣南纽荷尔脐橙的贮藏保鲜效果,对比赣南纽荷尔脐橙贮于水冷自然通风库、机械制冷库和常温贮藏库中果实总糖、总酸、Vc、可溶性固形物含量和风味等变化.结果表明,水冷自然通风库贮藏的果实,与机械制冷库贮藏果对比,总糖、可溶性固形物和总酸含量总体较低,Vc含量在贮藏试验后期高于机械制冷库贮藏果,果实风味较机械制冷库贮藏果差;与室温贮藏果实相比,总糖和可溶性固形物含量无显著差异,总酸及Vc含量在贮藏试验后期显著高于室温贮藏的果实,且食用风味较常温贮藏果好.水冷库贮藏能延缓脐橙果实贮藏后期总酸、Vc含量的下降速度,在5个月内能有效保持脐橙果实的水分及食用风味.
Evaporative cooling ventilating storage is a new type of reservoir to store navel orange,which has the advantages of environmental protection,energy and economical saving,and it used widely in Anyuan county( a county in Jiangxi province) in recent years. Aimed to research it's effectiveness on preservation and freshness keeping of Gannan Navel orange,different kinds of storage environments such as refrigerator,room temperature storage and Evaporative cooling ventilating storage were carried out to research. It trials the change of daily average temperature,RH among different storage environments,the Navel oranges' s total sugar,total acid,Vitamin C,soluble solid content and flavour,by three different storage ways. Results show that,the fruit stored in the Evaporative cooling ventilating storage,compared with refrigerator,that has lower content of total sugar,soluble solid and total acid,worse flavor,while kept a higher content of vitamin C at the later storage; compared with room temperature storage,there are no significant difference in total sugar and soluble solid content,but it keep a higher content of vitamin C and total acid at the later storage,moreover it all had a better flavor. In addition,Evaporative cooling ventilating storage can reducing the temperature properly and introducing humidity effectively. Overall,the results show that,the Evaporative cooling ventilating storage do worse than refrigerator,while it was much better than the room temperature for the storage of Gannan Navel orange.
