何宏先生的《民国杭州饮食》意在证明近代杭州饮食在中华饮食区域文化发展阶段有着其独特的发展历史与研究成果,以及证明近代杭州饮食文化独特的研究成果能够具体且生动地展示近代杭州的历史轨迹。该书的主要学术贡献有二:一是初步建立起近代杭州饮食文化史的体系;二是言明近代杭州饮食文化的历史是近代杭州社会政治、经济、文化等各方面变化的一种反映。

Hangzhou Catering during the Republic of China, the key works by Mr. HE Hong, aims at testifying the unique development history and research achievements of Hangzhou catering culture in the modern times during the Chinese catering culture development stage. The unique research achievements of Hangzhou catering culture in the modern times serves as specific and vivid presentation of the track of Hangzhou catering culture in the modern times.
