热泵干燥对香菇品质特性的影响 被引量:14

EFFECT OF HEAT-PUMP DRYING ON THE QUALITY CHARACTERISTICS OF LENTINULA EDODES

摘要 研究了热泵干燥过程中,干燥室内的风温、风速和装载量对香菇品质的影响.结果表明:香菇干燥中粗脂肪、粗蛋白、总糖及维生素C的保留率与风温、风速和装载量都有显著相关性,其中风温和风速对香菇品质的影响较大.综合比较可知,当干燥室内的风温为50℃,风速为3 m/s,装载量为1 500 g时,热泵干燥制得的干制香菇的品质较好. Lentinula edodes,which is rich in amino acids,polysaccharides and vitamins and other nutrients,is a low-fat and high protein nutrition health products. The present study was to investigate the effect of the air temperature,wind speed and loadages on the quality of Lentinus edodes during the heat-pump drying process.The results showed that: the drying air temperature,wind speed and loadages had significantly effect on the retention rate of the crude protein,crude fat,total sugar and vitamin C of the dried Lentinus edodes,and the temperature and wind speed had stronger influence. The retention rate of crude fat and crude protein of the Lentinus edodes increased with the increase of wind speed,while decreased with the temperature and loadage increasing. The total sugar content decreased with the increase of drying temperature,while increased with the wind speed increasing and first increased and then decreased with the increase of loadage. The retention rate of vitamin C decreased with the increase of drying temperature and loadage,while increased with the wind speed increasing. Comprehensive comparison showed that the optimal drying conditions was as follows: air temperature of 50 ℃,wind speed of 3 m/s and loadages of 1 500 g.
