摘要
《食品标准与法规》是研究与食品的生产、加工、包装、贮运、配送和销售等全过程相关的法律法规、标准及食品市场准入的一门综合性管理学科,是一门新兴的、时代性很强的课程。介绍了《食品标准与法规》课程的教学改革中所进行的一些有益的研究、探索与实践。笔者结合多年的教学实践,探讨了这门课程的教学特点及教学环节中存在的主要问题,尝试采用了以教师课堂讲授为主、学生自学和检索资料为辅的"启发式教学+案例教学+课堂讨论+多媒体教学"的混合教学模式。这种以培养能力为主的多种教学方法并施的教学模式,注重学生研究能力、思维能力、实践能力以及创新能力的培养,重视对学生价值的引导、心智的培育和知识的拓展,有效实现了课程内涵的提升。
Food Standards and Regulations is a new curriculum with contemporary character,which is a comprehensive management discipline about related laws and regulations,standards and market access in the whole process of production,processing,packaging,storage,transportation,distribution and sales of food.The practical experiences of teaching reform of Food Standards and Regulations were introduced in this paper.The teaching characteristics and the main problems existing in the teaching process of this course were also discussed based on years of teaching practice.The mixed teaching mode of "heuristic teaching+case study+classroom discussion+ multimedia teaching"was adopted,which is mainly supported by teachers' teaching and assisted by students' self-learning and information retrieval.This kind of mixed teaching methodology which is based on developing the ability of students pays attention to cultivating students' research ability,thinking ability,practical ability and innovation ability,and thinks highly of guiding students' values,cultivating their minds and expanding their knowledge.These reforms have effectively realized the improvement of the teaching quality.
