复合抗冻剂对蓝圆鯵冷冻鱼糜抗冻效果的影响 被引量:9

摘要 以蓝圆鯵冷冻鱼糜为材料,研究复合磷酸钠、山梨糖醇和聚葡萄糖对盐溶性蛋白溶解量和肌原纤维蛋白Ca^(2+)-ATPase活性的影响,并通过正交试验优化了抗冻剂的配方.结果表明:山梨糖醇添加量为4%、聚葡萄糖添加量为4%、复合磷酸钠添加量为0.3%时,抗冻效果最好.在此条件下,蓝圆鲹鱼糜冻藏6周后,测得盐溶性蛋白溶解量为31.67 mg·g^(-1),Ca^(2+)-ATPase活性为0.0901μmol·mg^(-1)·min^(-1),较未经处理的鱼糜分别高31.19%和42.30%. Novel antifreeze agents,including polydextrose,sodium phosphate and sorbitol were investigated to develop an effective formula for frozen Decapterus maruadsi surimi. Parameters of the treated surimi,including solubility of salt-soluble proteins and Ca2 +-ATPase activity of myofibrillar protein were analyzed to optimize the formula by orthogonal test. Results showed that antifreeze in the formula of 4% sorbitol,4% polydextrose and 0. 3% compound sodium phosphate had the optimum antifreezing efficacy with the highest solubility of salt-soluble proteins and Ca^2+-ATPase activity. Under this condition,Decapterus maruadsi surimi which was frozen for six weeks had a solubility of salt-soluble proteins at 31. 67 mg·g^-1and Ca^2+-ATPase activity of the myofibrillar protein at0. 0901 μmol·mg^-1·min^-1,which were 31. 19% and 42. 30% higher than that of the control group.
