摘要
从达乡传统发酵乳制品中分离纯化出13株疑似乳酸菌,其中5株球菌、8株杆菌,利用高效液相色谱法检测13株疑似乳酸菌合成γ-氨基丁酸能力,结果发现其中一株球菌具有很强合成γ-氨基丁酸能力,γ-氨基丁酸产量为2.91g/L;通过形态学和分子生物学鉴定,该高产γ-氨基丁酸菌株为嗜热链球菌QYWLYS-1。此外,考察了实验室保藏的4株双歧杆菌和7株乳酸菌合成γ-氨基丁酸能力,结果发现其中一株植物乳杆菌QYW-L-11具有较强合成γ-氨基丁酸能力,γ-氨基丁酸产量为1.38g/L。
Thirteen strains of lactic acid bacteria were isolated from the local traditional fermented dairy products, including five strains of Lactococcus and eight strains of Lactobacillus. One of them showed the highest GABA- producing ability by using HPLC. The production of GABA was 2.91 g/L. The strain was identified Streptococcus thermophilus QYW-LYS-1 based on morphological characteristics and 16S rDNA sequence determination. In addition, other seven strains of LAB and four strains of bifidobacteria in laboratory stock were assayed. The results showed that the high-yield GABA producing strain was Lactobacillus plantarum QYW-L-11 and the production of GABA was 1.38 g/L.
