“湖景蜜露”水蜜桃品质分析方法的研究

Study on Quality Analysis Methods of "Hujingmilu" Peach

通过建立水蜜桃果实品质的评价方法,为不同产地"湖景蜜露"水蜜桃的品质差异及成因提供分析依据,研究测定了宁波6个产区水蜜桃的6个感官指标(单果重、横径、纵径、果形指数、色泽、硬度)和5个理化指标(可溶固形物含量、可滴定酸含量、固酸比、维生素C含量、水分含量),比较各指标差异,同时对不同产地桃果品质聚类分析,并应用主成分分析法对其品质进行综合评价并排序。研究结果表明,不同产地水蜜桃品质指标存在差异,6个产区水蜜桃可聚为3类;在主成分分析中,其11个指标可简化为3个主成分,累计方差贡献率为91.288%,反映了水蜜桃的绝大部分品质信息。同时综合评价结果显示产地5、3、1的桃果品质相对较好。

To establish quality evaluation method of ＂ Hujingmilu＂ peach and provide the theoretic basis for the quality difference among different regions,six appearance indexes（ Single fruit weight,diameter transversa,vertical diameter,fruit shape index,colour,hardness） and seven nutritive index（ total soluble solids,titratable acid,ratio of TSS to TA,Vc and water content） of peaches form six different regions of Ningbo were measured. The data were analyzed by principal component analysis and system atic cluster analysis. The results show that the quality indexes of peach from different regions were significant different,Cluster analysis showed that the peaches could be divided into 3 classes,and in principal component analysis,there principal components were extracted,and their cumulative variance contribution rate was up to 91. 288%,which reflected the quality characteristics of peachesmostly. According to the comprehensive evaluation results,region5,3,1 had better overall quality among the tested.
