2014年南充市熟肉制品亚硝酸盐含量监测结果分析 被引量:7

摘要 目的了解南充市销售的熟肉制品中亚硝酸钠含量残留情况,防止亚硝酸盐对人体健康危害的发生。方法在南充市随机抽取零售摊点、专卖店、超市、餐厅4类制销单位共150家,采集500份熟肉制品,按GB/T5009.33-2010《食品中亚硝酸盐和硝酸盐的测定》检测亚硝酸盐含量。结果 500份样品中,亚硝酸盐含量超标162份,超标率为32.40%,最大值1 431.9 mg/kg。零售摊点熟肉制品超标(42.54%)高于其他制售单位,散装熟肉制品超标(39.99%)高于定型包装,乡镇熟肉制品超标(43.28%)高于城市(25.08%)。结论亚硝酸盐在南充市售熟肉制品加工中使用较多,特别是乡镇上销售的散装熟肉制品中亚硝酸盐含量超标较高,应引起有关部门的高度重视,进一步加强监督管理。 Objective To understand the content of nitrite in cooked meat products in Nanchong,and to prevent nitrite harm to human body health. Methods The content of nitrite in 500 cooked meat product samples collected from street vendors,exclusive shop,supermarket and restraurant were detected and analyzed. According to hygienic standards of using food additives( GB / T5009. 33- 2010),the contents of nitrite in the foods were detected. Results The overall exceeded rate of nitrite was 32. 40%,and the maximum was 1431. 9 mg /kg. The exceed rate in the street vendors was 42. 54%,higher than that of other selling units. The bulk type was higher( 39. 99%) than that of the packed food. And the rate of the foods sold in township( 43. 28%)were higher than that of the city( 25. 08%). Conclusion Nitrite is wildly used in cooked meat,especially in the cooked meat products in bulk sold in township. Which should give rise to attention of relevant department and more intensified surveillance need to be carried out.
