摘要
目的研究益生元对膳食中乳酸菌和原花青素相互作用的影响;方法以荔枝果皮原花青素为研究对象,模拟10种膳食来源的乳酸菌与原花青素的相互作用,通过比浊法、HPLC法记录微生物的生长曲线和原花青素的生物转化;探讨低聚果糖、水苏糖、棉子糖、菊糖和可溶性膳食纤维对优势菌株和原花青素相互作用的影响及规律;结果ST-01和L.casei-01为与原花青素相互作用效果最佳的菌株;低聚糖能在促进乳酸菌增殖的同时,有效增加原花青素的代谢和转化,其强化效果表现为四糖>三糖>二糖;结论益生元具有促进乳酸菌增殖和原花青素生物代谢的双重作用,有可能成为一种提高原花青素生物利用率的外源膳食。
Objective To investigate the effect of prebiotic on the interaction between lactic acid bacteria and procyanidins in vitro. Methods Ten lactic acid bacteria were cultured at the presence of litchi pericarp oligomeric procyanidins (LPOPC) to simulate the interaction between microbe and procyanidin, and this process was analyzed by turbidimetry and HPLC to determine the growth of bacteria and the transformation of polyphenols. Oligofructose, stachyose, raffinose, inulin and dietary fiber were added to the medium separately . Results ST-01 and L.casei-01 were the most optimum strains because of their resistance to procyanidns. Oligosaccharide could promote the multiplication of lactic acid bacteria, and improve the metabolism of litchi polyphenols. Conclusion Prebiotics have a dual effects in promoting the proliferation of lactic acid bacteria and biological metabolism of LPOPC, which could be considered as a dietary supplement in advancing the bioavailability of procyanidins.
