摘要
目的了解乌鲁木齐市食品中金黄色葡萄球菌的污染状况,为预防金黄色葡萄球菌食物中毒以及食品安全的危险性提供科学数据。方法采用GB 4789.10-2010《食品卫生微生物检验金黄色葡萄球菌检验》,并利用法国梅里埃全自动微生物生化鉴定系统对样品中分离的金黄色葡萄球菌进行生化鉴定。结果 2014年3-9月期间共检测食品5类454份样品,共检测出16株金黄色葡萄球菌,总检出率为3.5%。其中肉制品的检出率最高,为9.30%;其次分别为糕点、面食类,检出率均为5.00%;凉拌菜类检出率为2.37%,各类食品间检出率差异有统计学意义(χ^2=12.43,P〈0.05)。结论多种食品中检出金黄色葡萄球菌,存在一定的安全隐患不容忽视,应采取防范措施,加强食品卫生安全监督,提高人们食品卫生意识。
Objective To investigate the contamination status of staphylococcus aureus from food in Urumchi and provide scientific basis for the early warning of food poisoning and the hazard assessment of food safety. Methods According to GB4789. 10-2010 Microbiological examination of food hygiene Detection of staphylococcus aureus Staphylococcus aureus were carried out qualitative analysis. The Staphylococcus aureus were biochemically identified with VITEK2 system. Results 5 categories 454 samples from March to September in 2014 were detected,16 strains of staphylococcus aureus were identified,the total detection rate was 3. 5%. Meat has the highest detection rate of 9. 30%,followed by flour products was 5. 00%,and cold food was 2. 37%. There was significantly statistical difference among 5 kinds of foods( χ^2= 12. 43,P 0. 05). Conclusions Staphylococcus aureus contamination was found in several foods,indicating potential risk for poisoning to people 's health,therefore it is necessary to take precautions,strengthening supervision of food safety,improve people's consciousness of food sanitation.
