摘要
酸性电解水作为一种新型机能水,在我国已被广泛用于食品杀菌行业,本文在以强酸性电解水的杀菌机理及其应用分析的基础上,以自来水为对照,比较不同PH值电解水抑菌效果。结果表明:p H值为5.8、6.8及9.0的电解水及自来水的杂菌污染率分别是0.5%、1.7%和13.3%,酸性电解水的杀菌效果最佳并且绿色环保,可以作为食用菌生产用水,用做平菇菌种培养过程中的抑菌剂。因此,p H值为5.8的酸性电解水用作平菇菌种培养过程中的生产用水及杀菌剂最合适。
Acidic electrolysis of water as a new type of functional water, widely used in food sterilization industry, taking water as contrast, compare different PH bacteriostatic effect electrolysis of water. The results show that the p H value of 5.8, 6.8 and 9.0 of electrolysis of water and bacterial contamination of tap water rate is 0.5%, 1.7% and 0.5% respectively. Therefore, the p H value of 5.8 acidic electrolysis of water used for strains of oyster mushroom cultivation in the process of production water and fungicide is the best.
