农村土厨师团队食品安全认知、行为态度和需求调查分析 被引量:1

Investigation and analysis of knowledge,practical attitude and requirement on food safety among rural caterers

摘要 目的通过对湖州市吴兴区织里镇从事农村家庭宴席制作的土厨师团队成员,进行食品安全认知、行为态度和需求情况调查,探讨农村土厨师食品卫生安全知识培训管理对策。方法统一制订调查表,采用面对面访谈,对其食品安全知识认知、行为态度和需求进行调查并对结果进行分析。结果对从事农村家庭宴席要遵守什么法律、从业人员患病毒性肝炎是否调离和从业人员是否勤剪指甲、勤理发的正确率分别为90.4%、85.6%和71.2%,其他各项调查内容正确率均<70%。结论开展《食品安全法》及相关法律知识、卫生知识的培训、教育,使农村土厨师团队成员学法懂法,提高农村家庭宴席自律水平,加强引导和监督管理,全面增强食品卫生安全意识,促使农村土厨师切实履行食品卫生安全第一责任人。 Objective In order to study the strategies of food safety knowledge training and management for rural caterers,to make a survey on the knowledge,practical attitude and requirement on food safety among rural caterers operating familial banquets in Zhili town of Wuxing district,Huzhou city. Methods The survey was performed by questionnaire and interview on the knowledge,attitude and practice of food safety and requirement among rural caterers,and the survey results were analyzed. Results The accurate rates of the three questions,"what law the rural caterers should obey?","whether the rural caterers infected by the hepatitis B virus are transferred?"and"whether the rural caterers trim nails and cut hair regularly?",were 90. 4%,85. 6% and 71. 2%,respectively. The accurate rates of other survey items were all below 70%. Conclusion Carrying out the Food Safety Law and the relevant legal knowledge,health knowledge training and education,make the rural caterers study and understand law,so as to improve the rural caterers 'self- discipline,strengthen guidance,supervision and management,strengthen the food safety and health awareness,promote rural caterers to be the first person to fulfill responsibility of food hygiene and safety.
