不同来源乳酸菌对2种致病菌的抑菌活性比较及抑菌性质研究 被引量:5

摘要 天然抗生素已经成为现代生物科学和食品科学关注的热点,筛选出含有抑菌物质的天然抗生素菌株,已经成为食品、生物研究的新趋势。选用9株不同来源的乳酸菌对2种致病菌进行体外抑菌试验,采用牛津杯法对乳酸菌的上清液、上清液(p H=6.5)、超声波裂解液、活菌体的抑菌性能进行研究。试验结果表明,当致病菌为金黄色葡萄球菌时:上清液抑菌最好的菌株是H9,直径为2.56 cm;上清液(p H=6.5)抑菌最好的是L12,直径为1.26 cm;活菌体抑菌最好的菌株H8,直径为1.63 cm;超声波裂解液抑菌最好的是L2,直径是1.27 cm。当致病菌为沙门氏菌时:上清液抑菌最好的菌株是L16,直径为2.54 cm;上清液(p H=6.5)抑菌最好的是L17,直径为1.47 cm;活菌体抑菌最好的菌株L17,直径为1.27 cm;超声波裂解液抑菌最好的是L16,直径是2.04 cm。 Natural antibiotics have become a hot topic in modern biological science and food science, screening of the natural antibiotic strains containing antimicrobial substances is a new trend in food and biological research. 9 strains of lactic acid bacteria from different sources for 2 kinds of pathogenic bacteria in vitro bacteriostasis experiment was carried out. Oxford cup method was used to vitro antibacterial test in the supernatant of lactic acid bacteria, the supernatant(p H=6.5),the ultrasonic cracking and the live bacteria. The results show that pathogenic bacteria is Staphylococcus aureus, the best antibacterial strain of the supernatant, supernatant(p H=6.5),Live bacteria and Ultrasonic cracking liquid respectively is H9, L12, H8, L2. Above the best diameter respectively is 2.56 cm, 1.26 cm, 1.63 cm, 1.27 cm.Pathogenic bacteria is Salmonella, the best antibacterial strain of the supernatant, supernatant(p H=6.5),Live bacteria and Ultrasonic cracking liquid respectively is L16, L17, L17, L16. Above the best diameter respectively is 2.54 cm, 1.47 cm, 1.27 cm, 1.42 cm.
