吞咽功能障碍患者食品质构的调整与标准化 被引量:8

摘要 食物在口腔中的加工过程是由中枢神经系统控制的生理过程,也是一个食物结构破坏的物理过程,该过程不仅受人体口腔生理因素的影响,也受食品力学和几何学特性的影响。生理过程是影响口腔加工的内在因素,不同的个体存在着很大的差异;而物理过程则为外在因素,不同质构的食品之间其差异很大。
