新鲜蔬菜中的微生物污染危害、检测和控制方法研究进展 被引量:15

摘要 新鲜蔬菜富含多种维生素与纤维素等对人体健康有益的成分,是健康膳食的主要组成部分之一。人们对蔬菜的需求和消费量在近10 a内持续增高,伴随而来蔬菜的安全风险,尤其是微生物风险及其所带来的危害也在增加。蔬菜的微生物风险可以发生在从农田到餐桌的每个环节。有效地检测和控制有害微生物是保证蔬菜安全的基础。国内外对有害微生物的检测和控制方法的研究很多。目前的检测技术还难以实现在某些紧急情况下准确快速地检出致病菌,因此,在微生物的检测方法上还需要更多的研究与探索。目前的杀菌和抑菌方法各有利弊,更加有效、无毒和环保的抑菌技术需要被不断地研究与发展出来。 With the development of fresh vegetables worldwide, the safety of fresh vegetable products, especially the hazards of microbial contamination, is becoming a big issue. This article aims to review the hazards, detection and control methods of microbial contamination in fresh vegetables. The hazards of microbial contamination can arise at any points in the production chain of fresh vegetables from farm to mouth. Therefore, the detection and control methods for food-borne pathogens in fresh vegetables need to be improved.
