纤维素酶法制备马铃薯渣可溶性膳食纤维的理化及功能性质 被引量:17

摘要 采用纤维素酶处理湿马铃薯渣,制备可溶性膳食纤维(C-SDF),对其理化性质及功能性质进行研究。通过分析它的单糖组成、傅里叶红外光谱图和分子质量分布,确定C-SDF的主要组成成分为果胶和β-葡聚糖。理化及功能性质研究表明:C-SDF具有相对较的高分子质量和黏度,其葡萄糖延迟扩散能力、α-淀粉酶活力抑制力、胆酸钠的吸附能力和胰脂肪酶活力抑制力均高于马铃薯渣膳食纤维(PDF)和市售可溶性膳食纤维(S-SDF)。 Physicochemical and functional properties were investigated for soluble dietary fiber from cellulase modified potato pulp (C-SDF). By a comprehensive analysis of their monosaccharide distribution, infrared spectra and molecular weight distribution, C-SDF was mainly consisted of a mix of pectin and β-glucan. Research on func- tional properties confirmed that C-SDF exhibited better physiological activity in delaying glucose diffusion, inhibition of a-amylase activities, better adsorption capacity forsodium cholate and better inhibition of pancreatic lipase activity compared with potato pulp dietary fiber (PDF) and commercially available SDF (S-SDF).
