餐厨废弃物产量庞大,营养物质含量丰富,是很有前景的饲料化利用原料,但是餐厨废弃物易腐败。文章综述了餐厨废弃物饲料加工利用过程中存在的问题,食品腐败过程中微生物的变化及影响微生物生长的环境因素,并对微生物的检测方法进行了探讨。

Catering waste is a potential feedstuff and rich in nutrition, but very easy to spoil. This pa-per reviewed the problems of catering waste feedization, the microbial flora in the process of food spoil-age and influence factors. The detection methods of microorganisms were also discussed.
