摘要
采用3种不同型号的WPC 80作为壁材,DHA和ARA油剂为芯材,乳化包埋后,通过检测粒径和表面油性质的方法选择适合的壁材。然后以乳化后的粒径尺寸为稳定性指标,对均质机流量、均质机开度和混料温度3个乳化工艺参数进行了3因素3水平的响应面优化试验。结果表明:型号为3002的乳清蛋白-乳糖复合物作为包埋壁材,产品乳化稳定性最好。响应面分析表明均质机开度是影响均质乳化效果的最主要因素,优化后的最佳乳化工艺条件为均质机流量1.50 t/h、均质机开度为48.00%、混料温度为37.32℃。验证试验结果显示,响应面优化得到的最佳乳化条件准确可靠,按照建立的模型进行乳化试验在实践中是可行的。
In this study,three different types of WPC 80 were used as the wall material,DHA and ARA oil as core material,and the appropriate model was chosen by detecting the particle size and surface oil approach.Then,three process parameters including homogenizer flux,homogenizer opening and the mixing temperature were optimized using central composite design and response surface methodology based on the single factor investigations,the particle size of stability indicators as response values.The results showed that the model 3002 whey protein can improve emulsion stability,and the degree of opening homogenizer is the main factor affecting the particle size after homogenization.The best parameters of emulsion were as follows:the flux of homogenizer was 1.50 t/h,homogenizer opening was 48.00%,mixing temperature was 37.32 ℃.Under these conditions,measured the particle size of emulsion was 0.5013 μm,close to the theoretical value of 0.4996 μm.It can be showed the process parameters in line with expectation,which from optimization of production process of infant formula milk powder by usingresponse surface methodology.
