东平湖鲤与俄罗斯鲤、建鲤肌肉营养成分的比较 被引量:8

Comparative Analysis on Nutrient Components in the Muscle of Dongping Lake Carp(Cyprinus carpio), Russia Carp and Jian Carp

摘要 比较东平湖鲤与俄罗斯鲤、建鲤的含肉率和肌肉营养成分。结果表明:东平湖鲤含肉率显著高于其他2种鲤鱼(P<0.05);在常规营养成分上,东平湖鲤的水分低于建鲤(P<0.05),粗蛋白、粗灰分含量最低,与其他2种鲤鱼差异有统计学意义(P<0.05);粗脂肪含量最高,显著高于其他2种鲤鱼(P<0.05)。在检测出的17种氨基酸中,东平湖鲤EAA质量分数为39.82±0.39,与其他2种鲤鱼差异有统计学意义(P<0.05);东平湖鲤单不饱和脂肪酸含量为46.17±0.32,高于其他2种鲤鱼,差异有统计学意义(P<0.05)。东平湖鲤鱼肌肉中含有丰富的、人体所需的矿物元素。 The rate of flesh content and nutritional components of muscles are investigated and compared in Dongping Lake carp(DLC) as well as Russia carp(RC) and jian carp(JC). The results reveal that the rate of flesh muscle content of DLC is statistically higher than those of the other two carps(P〈0.05). As to the nutritional components, DLC owns obviously lower water content than JC(P〈0.05), along with the lowest contents of crude protein and crude ash compared with the other two carps(P〈0.05); nevertheless, the crude fat content of DLC is the highest, significantly different from those of the others(P〈0.05). In the 17 amino acid detectable, the essential amino acid(EAA) index of DLC is estimated to be 39.82±0.39, having statistical difference from those of the other two carps(P〈0.05). With respect to monounsaturated fatty acids, the contents in DLC(46.17±0.32) is also higher than those in the others with statistically significance(P〈0.05). The composition of mineral trace element in DLC is abundant and in keeping with the requirements of human body.
