摘要
饮食作为人类最重要的生命活动与价值活动,不仅是维持人类生命、增进营养与健康的自然欲求,还包含着丰富的文化内涵和伦理意蕴,这在中西方的饮食文化中都有明确体现。然而在当代中国饮食文化空前繁荣的同时,也出现了诸多饮食伦理问题,给中国社会和人民带来了极其恶劣的影响和难以估计的严重后果,因此,进行饮食伦理研究,有助于从伦理维度全面探讨中外饮食文化,建构新的饮食伦理文明,对民众正确的饮食观念、良好的饮食行为与合理的饮食方式的形成提供切实的价值指引与行为规范,从而提升国人的饮食道德素养和实现人生幸福,促进伦理学学术研究的视角与方法变革。其研究内容,可以从以下三方面展开:其一,个体饮食伦理,主要研究饮食的养生之道、德性修养与审美伦理;其二,人际饮食伦理,主要研究饮食礼仪、饮食的人伦教化和协调人际关系的作用;其三,社会饮食伦理,主要研究饮食伦理与政治、民族、社会风俗以及生态环境之间的关系。
Diet, as the most important aspect of human life and value, is not only a natural desire to sustain people's life and promote their health, but also entails rich cultural and ethical connotations, both of which can find their ways into the western and Chinese diet culture. However, with the unprecedented prosperity of Chinese diet culture, there emerge different diet ethical problems, bringing serious influences and incalculable bad consequences to the society and the people. Therefore, the research on diet ethics will, at least, benefit the following areas: exploring the western and Chinese diet culture from an ethical perspective, establishing a new diet ethical civilization, providing practical guidance and rules in the cultivation of reasonable diet ideas, behaviors and ways, promoting Chinese diet ethical qualities to realize their happiness and accelerating the reform in methodology of ethics research. The research will include there parts. Firstly, it will begin from individual diet ethics, which covers the diet regimen, ethical and aesthetic cultivation. Secondly, it will move on to the interpersonal diet ethics, including diet etiquettes and the influence of diet on education and communication among human beings. Lastly, it will focus on social diet ethics, mainly discussing the relations between diet ethics and politics, nationality, social customs and eco-environment.
