摘要
[目的]为探索研究夏南牛高档牛肉生产能力,在泌阳县夏南牛科技开发有限公司牛场,[方法]开展了20头阉割夏南牛24个月的持续育肥,并进行了屠宰、分割、测试及对肉质进行了实验室分析,[结果]:屠宰率为65.87%、胴体产肉率为84.58%、净肉率为54.45%、眼肌面积为118.47cm2、肉骨比6.46:1,高档优质肉块出肉率达48.44%,其中高档牛肉率18.39%,优质肉切块率30.05%。据对9头阉割育肥公牛眼肉、里脊、外脊、霖肉、米龙、辣椒条、大黄瓜条、小黄瓜条、肩肉、板腱十个部位牛肉品质测定,蛋白质含量(%)分别为:23.16±0.29、23.17±0.55、23.36±0.67、22.90±0.56、23.43±0.27、22.25±0.67、22.13±0.44、23.43±0.40、22.95±0.58、22.30±0.67;脂肪含量(%)分别为:6.23±2.14、6.10±1.88、4.39±2.21、4.08±1.69、3.85±1.87、3.22±1.37、3.46±1.14、2.98±1.78、4.65±1.93、4.81±1.04;肌肉剪切力/㎏分别为:2.71±1.12、2.67±1.20、3.63±0.93、3.31±0.62、3.00±0.97、3.83±0.69、3.27±0.75、3.62±0.58、3.20±0.56、3.03±0.75;胴体评价:按照中国NY/T 676标准评定9头胴体全部为S级,占样品总量的100%,;按照日本和牛胴体分级标准(2008版)评定A3胴体7头,占样品总量的77.78%,A2级胴体2头,占样品总量的22.22%。[结论]试验结果表明,夏南牛具有较强的优质高档牛肉生产能力。
[Objective]The experiments was carried out to research the meat production ability of Xi- anan cattle, in biyang Xianan Cattle Science and Technology Development Co. , Ltd. , farm. [Method]A total of 20 heads 24--month-old fattening Xianan steers were butchered, cut, texted in the the meat quality laboratory detection. [Result]Result: Slaughter rate was 65.87%. Carcass production rate was 84. 58%. Eye muscle area was 118.47 cm2. Meat-bone ratio was 6.46.1. High quality meat percentage was 48.44%. Among them, the rate of high quality beef was 18.39%, and the high quality cutting rate was 30.05%. The protein content (%) of Ribeye, Tenderloin, Striploin, thick flank, Topside, ChuckTender, Tenderloin, Silverside, Chuckcover, Plate tendon were 23.16±0.29, 23.17±0.55, 23.36±0.67, 22.90±0.56, 23.43±0.27, 22. 25±0.67, 22.13±0.44, 23.43±0.40, 22.95±0.58, 22.30±0.67 respectively; The fat content (%) were 6.23±2.14, 6.10±1.88, 4.39±2.21, 4.08±1.69, 3.85±1.87, 3.22±1.37, 3.46±1.14, 2.98±1. 78, 4.65±1. 93, 4.81±1.04 ,respectively, muscle shear force (kg) were 2.71±1.12, 2.67±1.20, 3.63±0.93, 3.31±0.62, 3.00±0.97, 3.83±0.69, 3.27±0.75, 3.62±0.58, 3.20±0.56, 3.03±0.75, respectively. Carcass appraisal. According to the Chinese NY/T 676 standard, all of carcasses were S-class, which accounting for 100% of the total sample; According to the standard of Japan and beef carcass grading (2008), there were 7 A3-class carcasses,, accounting for 77.78% of the total sample, 2 A2-class carcasses, which accounting for 22.22% of the total sample. [Conclusion] Our results showed Xianan cattle have significant meat production capacity.
