摘要 对安徽省石台县所产大树茶(晒青毛茶)的水浸出物、茶多酚、咖啡碱和氨基酸等常规生化成分进行了测定,并将测定结果与云南、贵州等地的大树茶进行比较,以期为更好地开发利用安徽省石台县大树茶提供理论依据。结果表明:石台县所产大树茶水浸出物、茶多酚、咖啡碱和氨基酸含量分别为41.9%,20.2%,3.8%和1.7%,与云南、贵州等地的大树茶相比,其茶多酚和氨基酸含量较低,水浸出物和咖啡碱含量适中,表明是一种滋味和苦涩感比较淡薄的茶;酚氨比为11.9,适于制作红茶和发酵茶类。 In order to provide a theoretical basis for better exploitation of old plant tea in Shitai County,Anhui Province,several biochemical components in crude greea tea were determined. The results showed the water extracts,polyphenols,caffeine and amino acids were 41. 9%,20. 2%,3. 8% and 1. 7%,respectively. Compared with old plant tea in Yunnan and Guizhou province,the content of polyphenols and amino acids in that of Shitai county is relatively low,and the content of water extract and caffeine is moderate,which indicates a relatively weak sense of taste and bitter feeling. The phenol ammonia is 11. 9. It is suitable for making black tea and fermented tea.
