摘要
目前啤酒过滤及稳定性处理普遍采用硅藻土进行过滤,存在质量不稳定、易引入金属离子而影响啤酒口感,废弃硅藻土对环境影响大,后续处理成本高等缺点,若硅藻土处置不当还会危害人体健康。利用一种可再生型的助滤剂Crosspure(简称CP),可一步完成啤酒的过滤及非生物稳定性的处理,不仅能代替硅藻土有效去除啤酒中的固体残留物,并能保证啤酒良好的口感、香气和外观。
At present, diatomite filtration is commonly adopted for beer, which has the disadvantages including unstable beer quality, beer taste deterioration induced by metal ions, environmental pollution by waste diatomite, and high post-processing cost, etc. Moreover, inappropriate treatment of diatomite might endanger human health. In this study, a renewable filtration agent Crosspure (CP) was used for beer filtration, which could achieve beer filtration and beer non-biological stability treatment in one step, effectively eliminate the residual solids in beer, and ensure satisfactory beer taste, beer aroma, and beer appearance.
