摘要
目前大曲检测指标研究包括理化及生化指标、微生物指标、酶系列指标、香味物质指标等。对大曲检测指标研究现状进行了简要概述,并对大曲在食品健康与安全生产研究方面提出了展望。
At present, Daqu detection indexes include physiochemical indexes, biochemical indexes, microbial indexes, enzyme series indexes and flavoring compounds indexes, etc. In this paper, the research progress in Daqu detection indexes was reviewed and the research on Daqu in the fields of food safety & health was discussed.
