氮气气调对不同含水量大豆保鲜效果研究 被引量:9

Effects of Controlled Atmosphere Storage with Nitrogen on the Quality of Soybean with Different Moisture Content

摘要 研究了26℃条件下,不同含水量(10%、12%、14%)大豆充氮气调(氮气体积分数96%~98%)与常规贮藏60d大豆品质指标和霉菌的变化情况。试验表明:充氮气调对抑制大豆发芽率下降,油脂酸值、过氧化值升高有一定效果。当大豆含水量为10%,充氮对发芽率影响显著(P〈0.05);当大豆含水量为12%,充氮对发芽率、油脂过氧化值影响显著(P〈0.05);当含水量为14%,充氮对油脂过氧化值影响显著(P〈0.05),对发芽率、油脂酸值影响极显著(P〈0.01)。充氮对大豆粗脂肪含量、霉菌菌落总数影响不显著(P〈0.05)。 The qualities of different moisture contents ( 10%, 12%, 14% ) of soybeans under controlled atmosphere storage with N2 (nitrogen concentration: 96% - 98% ) had been compared with soybeans that in conventional conditions at 26 ℃ after 60 days storage. The result showed that the controlled atmosphere storage with N2 could effectively inhibit soybean germination rate decrease and had ability to delay the increase of acid value as well as oil peroxide value. For the soybeans with 10% moisture content, the controlled atmosphere with N2 had significant effects on the soybean germination. cant effects on the controlled atmosph For the soybeans with 12% moisture content, the controlled atmosphere with N2 not only had signifisoybean germination but also on oil peroxide value. For the soybean with 14% moisture content, the ere with N2 had significant effects on oil peroxide value, extremely significant effects on soybean germination and acid value, while no significant effects on the crude fat content and total count of mould.
