摘要
以蛋白酶水解罗非鱼排上的碎肉为试验对象,研究其制备高F值寡肽的加工工艺。通过比较6种蛋白酶的水解效果,发现诺维信碱性蛋白酶最适合制备高F值寡肽。通过单因素试验及正交试验,确定水解的最佳条件为加酶量1 200 U/g碎肉,料水比1∶15,水解时间4 h,p H值8.0,水解温度50℃。水解液再经活性炭吸附脱除芳香族氨基酸后,所得寡肽的F值为23.1,符合高F值寡肽的要求。
In this paper,high fischer ratio oligopeptides(HFRP) are prepared by enzymatic hydrolysis of meat attached to tilapia bones. By comparing the effects of hydrolysis among six proteases,Novozymes alkalase is found to be most suitable for the preparation of HFRP. After single factor experiments and orthogonal test, the optimal conditions for hydrolysis are determined as follows:alkalase 1 200 U/g,ratio of meat to water 1∶15,hydrolysis time 4 h hydrolysis temperature 50 ℃,p H 8.0. After the removal of aromatic amino acids by activated carbon adsorption,the F value of the hydrolysate is 23.1. This level of F value has reached the standard of HFRP.
