摘要
面条品质影响因素的探究一直是面条产业中研究的热点。通过介绍小麦品质、制粉工艺、面粉中蛋白质含量及组分、面粉中淀粉含量及组分、面团改良剂的使用等主要因素与面条品质的关系,为如何提高面条品质提供参考。
The effects of quality on noodles have always been investigated in the processing industry as the focus. In this paper,the relationship between noodles quality and some main influence factors such as wheat varieties,protein and starch content or components,modifier,milling process are discussed,which provides references of improving the quality of noodles.
