摘要
采用压热法制备菠萝蜜籽抗性淀粉,研究分析淀粉乳质量分数、压热温度、压热时间、贮藏温度、贮藏时间对抗性淀粉制备产率的影响。结果表明,在制备过程中单因素最佳制备条件为淀粉乳质量分数20%,压热时间30 min,压热温度110℃,贮藏温度4℃,贮藏时间48 h,按照此工艺条件制备菠萝蜜籽抗性淀粉其制备产率可达到82%。
Study on autoclave processing technology for preparing jackfruit seeds resistant starch. The influence of starch pastes concentration,autoclave time,autoclave temperature,storage temperature and storage time on yield is compared. By single factor experiment,the xperimental results show that:starch slurry 20%,autoclaving 30 min,autoclave temperature 110 ℃,storage at 4 ℃,storage time 48 h,the yield of resistant starch is 82%.
