摘要
食用菌卫生学是食用菌专业(方向)设置的一门专业基础课,对控制食用菌产业链各环节卫生质量有着重要的意义。本文就食用菌卫生学这一课程的架构进行探讨,主要包括绪论、食用菌卫生概论、食物中毒及预防、食用菌生产企业卫生管理及实践教学,并对各部分的核心内容进行了研究并实践。
Edible fungi hygiene is a professional basic course for Edible fungi profession (direction) ,to control the sanitary quality of the edible fungus industry chain each link has important significance. In this paper, the course framework of edible fungi hygiene were discussed,mainly including introduction,edible fungus hygiene introduction, food poisoning and prevention, health management of edible fungus production enterprises and practice teaching. And research and practice the core content of each part.
