摘要
概述了我国发酵乳制品行业质量安全问题现状,结合原辅料质量、常见微生物污染、噬菌体污染和包装材料迁移四个方面分析了目前常见的安全危害来源,针对性提出了相应的解决方案,并对发酵乳制品安全的进一步研究方向进行前瞻性展望,为提高发酵乳的质量提供借鉴。
The status of quality and safety issues of fermented dairy products in China was summarized, of which hazard sources were analyzed based on the quality of raw materials, contamination of common microbes and phages, as well as migration of packing materials. Besides, the targeted solutions were pro- posed correspondingly, while the research interests were dairy products, in order to provide an advisable reference further prospected in the safety of fermented for better quality of fermented dairy products.
