安顶云雾茶是浙江省杭州市富阳区的历史名茶,在长期的炒制技术演变中形成了自己独特的加工和贮藏保鲜技术。安顶云雾茶的主要加工工艺流程为鲜叶摊放、初次青锅、二次青锅、辉锅和整理归堆等。炒制完成后应先在常温下用生石灰收灰7~10天,再进入冷库进行低温密封贮藏。
As a famous tea with a long history in Fuyang, Hangzhou, An'ding Yunwu Tea fostered its unique processing and storage techniques in the long-term evolution of the stir-fried green tea technology. The main processing techniques include the fresh leaves spreading, first deenzyming, second deenzyming rolling and drying,etc. The moisture on the tea should be absorbed by lime for 7-10 days soon after and then be sealed to store in cold storage.
