摘要
概述了2012、2013年度国内外乌龙茶加工产业在工艺、工艺诱导的理化基础、设备的改良和创新等方面的研究进展,提出了深化做青、焙火、贮藏等工艺参数的探索、传统与新兴乌龙茶产区间工艺的交流和创新以及工艺判别分析方法的应用等展望。
The paper summarized the advances in Oolong Tea process technologies in China and abroad in 2012 and 2013 in aspects of techniques, physical and biochemical principles induced by techniques, improvements and innovations of equipment. Outlooks were also put forward, which were deeper explorations of the parameters of green-making, baking and storing, innovations and exchange between traditional and new productiing areas, and also the judgement of process.
