冻干驴乳粉理化和卫生指标分析 被引量:5

摘要 冻干驴乳粉是利用巴氏杀菌-冷冻干燥工艺生产的纯驴乳制品。采用国标方法检测了冻干驴乳粉的理化和卫生指标,结果显示:冻干驴乳粉平均含蛋白质18.1%、脂肪9.2%、乳糖66.9%;氨基酸种类齐全,8种人体必需氨基酸含量占总氨基酸42.1%;牛磺酸含量为17.7 mg/100 g;必需脂肪酸(亚油酸和α-亚麻酸)含量占总脂肪酸28.6%;富含多种常量和微量矿物元素,其中钙、磷含量分别为819.0 mg/100 g和603.7 mg/100 g,钙磷比为1.36:1;维生素C含量达26.8 mg/100 g;污染物、真菌毒素以及微生物指标均符合国家标准和新疆地方标准。 The donkey milk frozen powder is the pure donkey milk product by pasteurization-freeze drying production technology. The physicochemical and hygienic indexes of the donkey milk frozen powder were analyzed by the national standard methods. The results showed that the percentage of protein, fat and lactose in the donkey milk frozen powder were 18.1, 9.2 and 66.9, respectively. There were fully kinds of amino acid in donkey milk frozen powder, and the percentage of eight kinds of essential amino acid was 42.1 in total amino acids. The average concentration of taurine was 17.7 mg/100 g. The percentage of essential-fatty acid ( linoleic acid and a-linolenic acid ) was 28.6 in total fatty acids. The donkey milk frozen powder was rich in a variety of constant and trace mineral elements, and the concentrations of calcium ( Ca ) and phosphorus ( P ) per 100 g were 819 mg and 604 mg, and the ratio of Ca/P was 1.36. The average concentration of vitamin C was 26.8 mg/100 g. The concentrations of pollution, mycotoxin and microorganism were all lower than the national and Xinjiang standard limits.
