摘要
目的了解目前动车快餐盒饭加工车间静态下空气洁净环境现状,为进一步完善其卫生管理措施提供科学数据。方法按照《铁路动车快餐盒饭食品安全控制要求》规定,采用CENTER310温湿度计、AREOTRAK9310计数器等仪器设备,测定动车快餐盒饭加工车间静态下空气洁净环境现状。结果检测数据表明,盒饭包装洁净区:ISO8.2;静态;关注粒径:5μm(48 961个/m^3);M(2 143;≥10μm);光学粒子计数器;沉降菌1个/皿;未检出致病菌。蔬菜加工洁净区:ISO8.3;静态;关注粒径:5μm(59 523个/m^3);M(5 148;≥10μm);光学粒子计数器;沉降菌2个/皿;未检出致病菌。热炒烹调洁净区:ISO8.2;静态;关注粒径:5μm(49 305个/m^3);M(2 418;≥10μm);光学粒子计数器;沉降菌1个/皿;未检出致病菌。米面制品洁净区:ISO8.2;静态;关注粒径:5μm(42 269个/m^3);M(2 059;≥10μm);光学粒子计数器;沉降菌0个/皿;未检出致病菌。结论《铁路动车快餐盒饭食品安全控制要求》中温、湿度及≥10μm粒子浓度指标设置不尽合理,需要及时修订。
Objective To understand the current status of railway EMU food plant cleanroom at-rest,and provide scientific data to further improve health management. Methods Environment monitoring of railway EMU food plant cleanroom at-rest were tested by CENTER310 hygrometer,AREOTRAK9310 counters and other equipments. Results Test data showed that there was ISO 8. 2 cleanliness at lunch packing cleanroom: 48 961 particles( 5 μm) / m^3 and 2 143 particles( ≥10 μm) /m^3at-rest; optical particle counter; 1 CFU / plate; no pathogens were detected. ISO 8. 3 cleanliness at vegetable processing cleanroom : 59 523 particles( 5 μm) / m^3 and 5 148 particles( ≥10 μm) / m^3 at-rest; optical particle counter; 2 CFU / plate; no pathogens were detected. ISO 8. 2 cleanliness at cooking cleanroom: 49 305 particles( 5 μm) /m^3 and 2 418 particles( ≥10 μm) / m^3at-rest; optical particle counter; 1 CFU / plate; no pathogens were detected. ISO8. 2 cleanliness at rice products cleanroom : 42 269 particles( 5 μm) / m^3 and 2 059 particles( ≥10 μm) / m^3at-rest;optical particle counter; 0 CFU / plate; no pathogens were detected. Conclusion When revised "Railway EMU Food Safety Management Approach ",hygrometer and ≥10 μm particle concentration indicators should be revised.
