摘要
研究了紫甘薯红色素的体外抗氧化活性。结果表明:紫甘薯红色素有一定的抗油脂过氧化作用,且具有剂量效应关系,一些抗氧化剂对色素的抗氧化性有协同增效作用;紫甘薯红色素还具有一定的还原能力、清除超氧阴离子自由基和羟自由基能力,且色素浓度越大,清除能力越强。
The antioxidant activity in vitro of purple sweet potato pigment (PSPP) was studied. The result indi- cated that PSPP possessed certain anti-lard peroxidation effect, and the effect had a direct relation with the agent amount. Some antioxidant contributed to the antioxidant ability of the pigment; The pigment also had certain reducing capacity and scavenging O2-" and · OH capacity, and the scavenging capacity was stronger under higher concentration.
