摘要
目的了解温岭市市售熟肉制品中微生物污染的状况,为加强各类市场的卫生监管监测工作提供科学依据。方法按GB/T4789.17-2003进行检测,按《熟肉制品卫生标准》(GB2726-2005)进行判定。结果共检测熟肉制品样品152份,总合格率为53.3%,2010-2014年合格率分别为28.6%、31.4%、68.3%、75.0%和79.3%,呈逐年增加趋势(χ2=29.26,P<0.05)。不合格项目主要为菌落总数、大肠菌群。结论温岭市市售熟肉制品卫生质量仍存在隐患,被微生物污染的情况应予以重视。加强卫生监督管理及卫生宣教是预防熟肉制品等食源性疾病的有效途径。
Objective To investigate the contamination of cooked meat products in citv and microbial Wenling to provide scientific references for health supervision. Methods The test work was conducted according to GB/ t4789. 17 -2003 and determined according to Hygienic Standard for Cooked Meat Product. Results In total, 152 samples were tested, with the qualified rate of 53.3%. And the qualified rate was respectively 28.6%, 31.4% , 68.3% , 75.0% and 79.3% in 2010 -2014, showing an uptrend (X^2 =29.26, P 〈0. 05). The unqualified items were majorly total bacterial count and coliform. Conclusion The hygienic quality of cooked meat products in Wenling city still has hidden risk and close attention need to be paid. Strengthened supervision and health propaganda are the effective approaches to prevent the foodborne diseases.
