红外烧烤机的设计与试验

摘要 传统烧烤方法烧烤的食物风味独特,但存在较多弊端。红外烘干是一种新兴的烘干技术,本研究利用红外线燃烧器作为加热源研制了一种便携式红外烧烤机。烧烤机主要由液化气罐、调压阀、Y型3通阀、红外线燃烧器、烤架、挡火板和支架等组成。红外烧烤机的烧烤时间短,操作简单,无烟且无污染。试验结果表明,烧烤机烧烤的食物与传统方法烧烤的食物风味相似。 Roast food has unique flavor by traditional barbecue, and there are some disadvantages. Portable infrared barbecue machine was designed with infrared burner as its heating resource. The barbecue machine is composed of liquid gas storage tank, pressure regulating valve, Y-valve, infrared burner, gridiron, fire proof plate and support. And it has advantages of less barbecuing time, easy operation, smokeless and non-polluting environment. The results demonstrate that barbecued food by prototype has similar flavor compared with those barbecued by traditional method.
