The advantages of natural antioxidant are antimicrobial and antioxidative, no side effects and preservative and fresh - keeping etc. ,it will have a broad prospect in the field of meat industry. This paper summarized the phenomenon of meat oxidation, and the general characteristics of natural antioxidant and the application in meat products.
