The Application of Natural Antioxidant in Improving Meat Quality

摘要 天然抗氧化剂具有抗茵抗氧化、安全高效、无副作用和防腐保鲜等优点，在改善肉质上具有广阔的应用前景。本文概述了肉质氧化、天然抗氧化剂的一般特点及在肉制品工业中的应用。 The advantages of natural antioxidant are antimicrobial and antioxidative, no side effects and preservative and fresh - keeping etc. ,it will have a broad prospect in the field of meat industry. This paper summarized the phenomenon of meat oxidation, and the general characteristics of natural antioxidant and the application in meat products.
