摘要
餐饮业食品安全问题频发,日益受到政府部门的重视和消费者的关注.分析了目前我国餐饮企业面临的食品安全问题,提出加强政府部门的监管力度、建立"从原料到菜肴"的餐饮业食品溯源管理方案、推广HACCP管理方式、强化餐饮企业从业人员食品安全意识和规范安全操作的食品安全应对措施.
The frequent occurrences of food safety problems from both the government and consumers. Targeted at this in catering industry have received increasing concerns problem, this paper analyzes the food safety problems encountered by current China' s catering industry, and proposes some countermeasures against them by strengthening the governmental supervision, establishing a restaurant food traceability management scheme from raw mate- rials to dishes, promoting the HACCP management mode, raising the staff' s food safety awareness in the related industry, and setting up food safety standards for safe operation.
