家蚕蛹蛾的营养组成评价分析 被引量:16

摘要 为明确不同性别家蚕蛹蛾资源的营养组成优势,通过比较其基本营养组成,分析蛋白的氨基酸和油脂的脂肪酸组成。结果发现:家蚕蛹蛾(干物质)的蛋白和脂肪含量超过80%,其中雄性脂肪含量较高,雌性蛋白和糖类含量较高,蚕蛹在羽化成蛾的变态过程中,水分、灰分、总糖含量显著下降。氨基酸组成分析发现,家蚕蛹蛾蛋白中必需氨基酸约占氨基酸总量的38%,其中雄性的赖氨酸和精氨酸含量明显高于雌性,氨基酸评分依次为雄蛾(100分)、雄蛹(94.8分)、雌蛹(80.9分)和雌蛾(73.1分);脂肪酸组成分析发现,家蚕蛹蛾不饱和脂肪酸的相对含量均在70%左右,其中雌性明显高于雄性。结果显示,家蚕蛹蛾是一种优质的昆虫油脂蛋白新资源,营养组成优势突出,形态性别差异明显。 To identify nutrient composition advantage of silkworm ic nutrition composition was compared and their amino acids and fatty pupae and moths of different gender, the bas- acids composition were evaluated. The results showed that the protein and fat content of silkworm pupae and moths more than 80%. The male contained more lipid, however, higher content of protein and sugar for female. Moisture, ash, carbohydrate content of silkworm pupae dropped significantly in eclosion process. Amino acid composition analysis found that essential amino acids accounted for about 38% in silkworm pupae and moths. In addition, contents of lysine and arginine in male were significantly higher than female. Amino acid score was as follows : 100 for male moth, followed by male pupa (94.8) , female pu- pa (80.9) and female moth (73.1). Fatty acid composition analysis found that the relative contents of unsaturated fatty acids were around 70% and female contained obviously higher than male. The result shows that silkworm pupae and moths are new sources of high quality protein and lipid, because of rich nutrition, obvious morphology and gender difference.
