摘要 茶色素是多酚类物质及其氧化产物的混合物,主要包括茶黄素、茶红素及茶褐素。由于茶色素含有大量的酚羟基等活性基团,因此具有较强的生物活性,对其抗癌、抗肿瘤、抗氧化、降血脂和消炎杀菌等生物活性功能进行了综述,探讨了其未来研究的重点。 Tea pigments are mixtures of tea polyphenols and their derivatives, in which major components are theaflavins (TFs) and thearubigins (TRs).Tea pigments contains a large amount of active function group and they have very strong ef-fects on antioxidation and elimination of free radicals. This paper roundly reviewed the research progresses in the biological activity of tea pigments, such as the researches on the anti-cancer, anti-tumor, anti-oxidation, reducing blood-lipid, anti-inflammatory and antibacterial effects of tea pigments, and put forward the research focus of this field in the future.
