摘要
溴酸钾是我国近期规定禁用的一种面粉添加剂。主要用于面包生产的溴酸钾,就是一个从曾经广泛使用到严格限制,直至被逐渐禁止使用的例子。本文综述了溴酸钾的用途和危害,介绍了用碘滴定法(AACC48-42)、阴离子交换-电化学检测法检测溴酸钾的方法,侧重介绍了溴酸钾的替代品及其发展前景。
Potassium bromate is our country recently provided a disabled flour additives. Mainly used for bread production of potassium bromate, is an example that has been widely used to strictly limit until being gradually prohibited. This paper reviewed the application and harm of potassium bromate, introduced the method of detection of potassium br.omate by iodine titration method (AACC48-42), anion exchange and electrochemical detection method, focused on the substitute of potassium bromate and its development prospect.
