摘要
餐饮业自2012年开始迎来了行业拐点,作为中国餐饮产业三驾马车之一的"火锅",近年来运行较为平稳,对餐饮市场的整体消费起到了重要的拉动作用。基于2011—2015年《中国餐饮产业发展报告》和系列统计年鉴的相关数据的深入对比研究,总结了当前中国火锅的行业发展特征,分析了火锅业面临的突出问题与挑战,并提出了相应的对策。
Despite the recession of the catering industry since 2012, hot pot businesses have been developing steadily, helping to harness the overall downturn of catering consumption. This paper conducts comparative ana- lyses of data drawn from relevant annals and China's Catering Industry Development Report between the years 2011 to 2015 before summarizing its features. Challenges and problems in its development are also expounded. The paper concludes with strategies to tackle these issues.
