摘要
以铁观音茶梗为原料,采用纤维素酶水解法对其进行改性处理,以SDF粗品溶出量为指标,通过单因素试验和正交优化试验,确定了铁观音茶梗纤维素酶解改性的最优工艺条件为:料液比1∶16,纤维素酶添加量为4%,酶解温度50℃,酶解时间5h,p H值4.7,在此条件下SDF溶出量为3.11g/100g.同时测定了改性茶梗粉末的功能指标,结果为:持水力6.55g/g、膨胀力2.83m L/g、结合脂肪能力3.57g/g,相较于改性前的持水力4.45g/g、膨胀力1.30m L/g、结合脂肪能力0.67g/g有明显提高,为铁观音茶梗综合利用的走向提供了一定的理论依据.
With Tie Guanyin tea stalk as raw material, the modification was carried out by means of cellulase modi- fication hydrolysis. Using the dissolving - out amount of water soluble dietary fibre as index, by single factor experiment and orthogonal optimization experiment, the optimum process conditions of eellulase modification of Tie Guanyin tea stalk are achieved as follows : stock ratio 1 : 16, cellulase amount 4% , temperature 50~C , time 5h, pH 4. 7. Under the optimum conditions, the SDF dissolution amount reached 3.11 grams per 100 grams. And we also tested the functional index of modified tea stalk pow- der, the results showed that WHC was 6.55g/g, expansive force was 2.83mL/g, and the fat - binding capacity was 3.57g/g which are obviously higher than the before functional properties WHC 4.45g/g, expansive force 1.30mL/g, and the fat - binding capacity 0.67g/g and provided theoretical basis for comprehensive utilization of Tie Guanyin tea stalk.
