猪肉中假单胞菌生长模型的研究进展 被引量:3

摘要 猪肉是最常见的肉类食品,在生产与贮存等过程中极易受氧化作用、微生物侵染等因素的影响而腐败。假单胞菌是猪肉中的优势腐败菌,也是导致其腐败变质的主要微生物,准确的假单胞菌生长模型,能够预测猪肉中的假单胞菌的生长状况及其数量,对预测猪肉的货架期及构建风险评估具有重要意义。本文主要对假单胞菌生长模型的当前研究进展进行综述,并展望了其发展前景,为建立和应用猪肉中假单胞菌新的生长模型提供参考依据,进而为对食品进行风险评估、建立HACCP体系、研发产品及研发软件产品提供依据。 Pork is the most commonly consumed meat worldwide. It will be spoiled if the pork is affected by the oxidation and microbial infection in the process of manufacture and storage. Pseudomonas is the dominant spoilage bacteria and one of the main microorganism that induce the spoilage of pork. Establishing an accurate growth model to predict the growth conditions and the number of Pseudomonas in pork is significant for predicting the shelf life of pork and implementing risk assessment. In this paper, the current research progress of Pseudomonas growth model are reviewed and the future research aspects are put forwarded. The results of this paper can provide technical support for developing new growth models to promote the risk assessment, HACCP system, product development and software products of food.
