“市菜”文化及其对餐饮产业的影响

摘要 "市菜"是一个城市饮食文化的代表,无论对于地方的文化旅游资源还是餐饮产业发展都具有重要意义。"市菜"具备历史底蕴深厚、地域特征鲜明、社会影响力大、美食属性独特等特征。其文化意义体现为承载城市的历史信息,代表城市的文化名片,展示城市的非物质文化遗产。因此,有必要对"市菜"进行文化传播与品牌建设,以"市菜馆"为城市辨识符号推广餐饮品牌。 City cuisine representing urban catering culture is of great significance both in local cultural tourism resources and catering industry development. City cuisine is characterized by profound historical culture, distinctive regional characteristics, great social influence, and unique food properties. City cuisine serves as the carier of the city historical information, cultural impliction, representation of the city's cultural card and demonstration of intangible cultural heritage of the city. Therefore, it is of necessity to carry on cultural dissemination and brand construction of city cuisine and popularize catering brands with city food restaurant as symbols of city identification.
