乳化剂对淀粉上浆性能的影响

摘要 探讨脂肪醇聚氧乙烯醚类乳化剂添加量对淀粉上浆性能的影响。将乳化剂和玉米淀粉进行共混,然后对混有乳化剂的玉米淀粉进行糊化,测试分析了浆液储藏稳定性、淀粉蓝值、差示扫描量热特征参数以及黏度热稳定性、黏附性。结果表明:当脂肪醇聚氧乙烯醚加入量相当于淀粉干基1%-1.5%时,淀粉浆液即具有低温不凝胶、黏度稳定性好、冷热黏度差别小的特点,但对纯棉和涤棉纱的黏附力有所下降;在脂肪醇聚氧乙烯醚的存在下,其疏水链进入直链淀粉螺旋结构,形成了稳定的直链淀粉/乳化剂复合物。认为适量加入乳化剂可以有效改善淀粉浆的凝胶性和黏度稳定性。 The influence of fatty alcohol polyoxyethylene ethers emulsifier additive amount on thestarch sizing property was discussed. Emulsifier was mixed with corn starch. Then corn starch mixed with emulsifier was gelatinized. Properties including storing stability of sizing mixture,blue value of starch,differential scanning calorimetry characteristics parameters,viscosity thermal stability and adhesion property were tested. The test results show that starch sizing mixture has properties like no gelling;under lower temperature, stable viscosity and smaller viscosity difference between cool and hot when the amount of fatty alcohol polyoxyethylene ether is equal to 1%-1.5% starch dry base. However,its adhesion force to pure cotton yarn and polyester cotton blended yarn were decreased. With the existence of fatty alcohol polyoxyethylene ether,its hydrophobic chain directly enters the spiral structure of amylose. Stable amylose/emulsifier composite was formed. It is considered that the gel property and viscosity stability of starch sizing mixture can be effectively improved by adding suitable amount of emulsifier.
